Not Quite What I Wanted But The Best Available
I have a Chicago Cutlery knife I have been using for about 30 years and I love it. I can still sharpen it but the edge is pitted and I keep searching for a replacement. It turns out my knife is their steak knife and is no longer sold. It is a perfect food prep knife.
This 5 inch knife has a blade just a tad longer than my old one and it came plenty sharp. The part I don't like as much is that the knife as a whole is much longer and the handle is about twice as a bulky. But it'll do.

My Favorite Knife
I am extremely fussy about knives. In order to earn a place in my kitchen a knife must be able to hold a nearly razor edge, not rust, and have a specific function. I got two sizes of these Chicago Cutlery knives for a wedding present 15 years ago, and this one particular knife has turned out to be my favorite all-around knife. I do not even bother to put it away in between uses, because I will take it right back out again. I have three other knives that I keep in my kitchen: a bread knife, a chef's knife, and a 3 inch paring knife. Of the three, the only one I use regularly is the chef's knife, which I use for things like slicing open cantaloupes and chopping things finely. For all other cutting functions I use this one Chicago Cutlery knife. I use it for cutting cheese, slicing apples, cutting up smallish things, cutting meat, and many other things that I can't think of at the moment.
One of the best qualities about this knife is its ability to attain nearly a razor edge when it is sharpened. I admit that I fuss over my knives, because I feel it is important that they stay sharp and in good condition. I have never seen any hint that this knife will rust, though I admit that the knife they sell today may be different from the knife they were selling 15 years ago. I also like the wooden handle. I do not have a dishwasher, but if I did, I would not wash this knife in it because of the wooden handle. Wooden handles take a beating in dishwashers. The intensive washing dries out he wood and causes it to become brittle and cracked. The handle conditions itself from contact with oily food from time to time, so it does not need treatment. I suppose if I saw that the handle were getting dry, I would rub it down with olive oil.
Over the 15 years that I have owned this knife, I see little sign of wear. I suppose if I keep sharpening it, then the blade will eventually become worn down, but this has not happened yet. I expect this knife will last my lifetime.

I have used this knife daily for 30 years
This is my favorite knife. I purchased four Chicago Cutlery knifes about 30 years ago; an 8" chiefs, a 5" boning knife (this one), a 3" paring knife (rarely use) and a 6" utility knife (never use). By far I use the boning and chiefs knifes the most. I have been using this knife every day for all those years and it still works great. I use it to cut a LOT of vegetables to blend and make a vegetable smoothie every day. All I have to do is sharpen or straighten the blade out every few months and it is good as new.
This new knife seems to be almost the same. The only difference I can tell is the tang is not quite as flush to the wood handle as the original. But makes no difference to me and works just as good.
I read one reviewer say that the handle is 1/4" shorter so I measured mine. Mine is a little shorter but not 1/4", more like 1/8" and I did not even notice it until I read about it.

Very nice value boning knife
Knife has been preforming excellently. Used it to butterfly my Turkey for thanksgiving, in conjunction with my heavier all clad chefs knife. It is not a flexible or long boning knife. But it was perfect for getting through the shoulder joints. Very sharp. I prefer the rigid structure compared to the more flexible boning knifes. Works great for poultry. This is a good value knife and It was a good deal so I don't find beating this knife up breaking down chickens or turkeys.

I purchased this knife to improve my collection of kitchen cutlery and have a quality knife at a reasonable price. It came sharp and holds a good edge, which can be maintained easily. The handle is a sturdy and larger grip than most knives and I like it for this and the quality of the steel. Looks good and cuts great for most medium sized jobs on the cutting board.

I too have had this knife for over 25 years and it is my favorite - so I when I misplaced it, I was happy to find the exact same knife. I thought the new knife felt and worked as well as my old one - only I kept cutting myself because it was sharper. :) Unfortunately, within 2 months, one of those little rivets just fell out of the knife handle. So now the knife is loose and unusable. While it makes me sad that things just aren't made as well as they used to be, it makes me very happy that customer service at Chicago Cutlery was more than happy to replace the knife without me even returning the old one. I do appreciate great customer service and have faith the next knife will last!!

A knife for many uses
If I had only one knife out of many to choose, this boning knife would be it. I still prefer the walnut handle over other synthetic choices. the knife suffices for many tasks and the blade stays sharp a long time with proper care..

Good product -- if you are OK with sharpening frequently
Good product. The only issue is that it requires FREQUENT resharpening. If you are not prepared to use a sharpener almost daily I'd recommend not buying it.

Great knife, I was replacing 2 I have had over 30 years. The handles are finally getting loose. Love these for cutting veggies and whatnot, better than a paring knife to me.

Chicago Cutlery 5 inch Boning knife
My second or third purchase of this knife (some as gifts). The one I use has given me outstanding service for nearly two years. It can be sharpened to a razor edge (sharp enough to remove the "silver skin" from beef briskets, with proper sharpening, steeling, and stropping; or toned down a little for a dandy boning/utility knife in the kitchen. Chicago Cutlery has been a mainstay for many years, and their knives remain very high on my list as one of the best (AND YOU DON'T HAVE TO FLOAT A LOAN FROM THE BANK TO BUY ONE OF THEM) I own several, in different styles, and will continue to purchase. Highly recommended!

Chicago knives are the best of any I have ever known
Chicago knives are the best of any I have ever known. I was given this knife by my mother in the earlly 70's. It was my favorite and most used knife until it broke in 2014. I have been at a loss ever since but I finally ordered a new one on 2DayDeliver. I am thrilled to have it back but the wood handle is a little rougher than they used to be. I have applied lemon oil to get it back where my old one used to be.

Best knife I ever used
Best knife I ever used. I bought this brand 10 years ago and is still the best knife in my house. Now after so many years it start to show the age, in the mean time I bought few other brands but none can equal Chicago Cutlery.
This new one same quality, didn't disappoint me at all !!! LOVE IT !
